Prime beef filet on potato cake and stir-fried vegetables with soya wasabi sauce made by Executive Chef Nguyen Quoc Dung from Corso Bistro of Norfolk Hotel, HCM City

Corso Bistro’s executive chef invites diners to try his hearty dish of prime beef filet on potato cakes with stir-fried vegetables and soya wasabi sauce. The sauce’s special aroma and taste are key elements that make the dish a stand-out. Its delicacy does require time to cook as the beef filet needs to be marinated well. The dish can be served as a main course for a lunch or dinner party.

Ingredients: to serve 1
For marinated beef:

    •    
      200g beef filet
         
    •    
      10g chopped shallots
         
    •    
      5g chopped garlic
         
    •    
      5g black pepper
         
    •    
      20ml olive oil

    For stir-fried vegetables:

      •    
        10g lightly boiled black mushrooms
           
      •    
        10g lightly boiled baby sweet corn
           
      •    
        10g lightly boiled carrots
           
      •    
        10g broccoli
           
      •    
        10g bean sprouts (without bottoms)
           
      •    
        10g bok choy, blanched
           
      •    
        10cc sesame oil
           
      •    
        1tsp oyster sauce
           
      •    
        10cc vegetable oil
           
      •    
        5g chopped garlic
           
      •    
        Salt and pepper to taste
           
      •    
        3g sugar

      For potato cakes:

          100g potatoes
             
        •    
          10g butter
             
        •    
          2tsp vegetable oil
             
        •    
          15g bread crumbs
             
        •    
          5g mozzarella cheese
             
        •    
          5g chopped spring onions
             
        •    
          Salt and pepper to taste

        For soya wasabi sauce:

            20ml red wine
               
          •    
            1/4tsp wasabi paste
               
          •    
            2tbsp brown sauce (beef sauce)
               
          •    
            1/4tsp soya sauce
               
          •    
            A bit of sugar
               
          •    
            Salt and pepper to taste

          Preparation:
          Marinated beef:

            •    
              Combine all ingredients in the bowl and add beef. Marinate overnight or for 12 hours, then take the beef filet out. Grill beef until golden brown and put it in a 350oC oven for 12 minutes until it is cooked medium-well.

            Stir-fried vegetables:

                Heat the pan, then pour in oil, add garlic and saute until it turns light brown. Put all vegetables into the pan, season with oyster sauce, sugar, salt and pepper, then stir well.
                   
              •    
                After one minute, put in sesame oil and turn off heat.

              Potato cakes:

                  Peel potato and cut into 5cm squares.
                     
                •    
                  Leave in pot of boiling water until soft, then drain well and mash.
                     
                •    
                  Take another pan and put butter, chopped spring onions, mozzarella cheese, salt and pepper, then add mashed potato and mix on heat until the cheese melts.
                     
                •    
                  Shape potato into a round cake and coat with bread crumbs. Leave to cool for 30 minutes.
                     
                •    
                  Heat a nonstick pan with oil, then fry the cake on both sides until golden brown and crispy.

                Soya wasabi sauce:

                  •    
                    Reduce 1/3 of the red wine, and add brown sauce, wasabi and soya sauce. Reduce again until it is light and thick, then season with sugar, salt and pepper.

                      Place the potato cake in the centre of the plate, then spread the stir-fried vegetables over the potato cake.
                         
                    •    
                      Add three blanched asparagus and put the beef filet on top.

                      Add one fried basil leaf.
                         
                    •    
                      Pour the soya wasabi sauce onto the plate.
